Crispy on the outside, creamy on the inside, these baked avocado fries are a healthy and delicious snack. The tangy lime dipping sauce adds a perfect touch.

INGREDIENTS
- 2 ripe avocados
- 1/2 cup flour
- 2 flax eggs
- 1 cup panko breadcrumbs
- Salt to taste
- For the lime dipping sauce:
- Juice of 1 lime
- 1/2 cup vegan mayonnaise
- 1 clove garlic, minced
INSTRUCTIONS
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice the avocados into wedges.
- Dredge each avocado wedge in flour, then dip in the flax egg, and finally coat in panko breadcrumbs.
- Place the coated avocado wedges on the prepared baking sheet and bake for 15 minutes, or until golden and crispy.
- While the avocado fries are baking, prepare the lime dipping sauce by combining the lime juice, vegan mayonnaise, and minced garlic.
- Serve the baked avocado fries hot with the lime dipping sauce.
